serves 4
4 chicken joints, cleaned
15 fresh prawns
2 onions, finely chopped
5 cloves of garlic
3 red tomatoes, chopped
2 slices of toast
parsley
olive oil
salt
Fry the prawns in an earthenware dish with a little oil. Reserve four uncooked heads to finish the sauce.
Set aside the prawns and fry the seasoned chicken in the same oil
along with 3 cloves of garlic.
Once the chicken is golden, add the onion and cook for 15 minutes.
Add the tomatoes and cook for a further 20 minutes, on a low heat.
After 10 minutes, add a little water and check the seasoning.
Finally, put the four uncooked prawns' heads, the toast, parsley, 2 cloves of garlic, a little oil and water in the food processor and add the mixture to the chicken to cook for the last few moments.
