1 lb/ 500 g minced beef
4 rashers streaky bacon
2 eggs
salt
pepper
mixed herbs
1 onion
1 clove of garlic
breadcrumbs
lard or dripping
Fry the chopped onion and garlic till soft and golden.
Discard the garlic and mix the onion with meat.
Beat one egg and fold into the meat, with mixed herbs, salt and pepper.
Form the meat into a loaf and baste with the second egg and breadcrumbs.
Place in baking pan, wrap the bacon over the roll and bake in a hot oven for 1 hour (add a tablespoon of fat to the pan).
Serve with tomato sauce.
